Mix together all the ingredients for the overnight oats (yogurt, oats, coconut milk, chia seeds, vanilla, and maple syrup or stevia). Place in a covered bowl in the fridge overnight.
The Next Morning: Give your oats a stir. Then, top with toppings of your choice! We really enjoyed kiwi, banana, cherries, pineapple, and toasted coconut. You can either top your oats directly in a bowl or layer them like a parfait - either way it will be delicious!
NOTE: I recommend coconut milk for this recipe to stick with the tropical theme, but if you are just making generic overnight oats you can use any kind of plant milk.
