Honestly, I think I would love this dip even if it wasn’t tasty because it’s like a neon bowl of loveliness. And that’s what we’re all looking for in our food, right?

A couple of notes about this strawberry basil goat cheese dip:

  • Dried basil does not work. Normally, I prefer fresh herbs but I totally understand that life happens and we don’t always have the time/budget to make fresh herbs happen. In most cases I am on board with a dried herb substitution. But not this time. Trust me, I tried.
  • If you hate (or you know, just don’t like) the taste of goat cheese you can absolutely substitute in creamed cheese – it will still be delicious.
  • This dip is a little runny right after you make it and needs to be refrigerated to firm up a bit. Which means if you want to serve it for company you have to plan ahead (something I am terrible at), but it is an excellent make-ahead dish that you can just pull out of your fridge and impress your guests with!

Ingredients

  • 2 c strawberries chopped, about 15 to 18
  • 1/4 c fresh basil dried basil does not work
  • 8 oz goat cheese softened and crumbled
  • 1 c butter softened
  • 1 T honey
  • 2 T seedless strawberry jam
  • salt to taste
  • crackers

Instructions

  • Combine all ingredients except the crackers in a food processor. Blend until smooth. Taste and adjust according to preference. Serve immediately or store in the fridge for up to 4 days.
  • NOTE: This dip can be made ahead of time (several days ahead of time) and enjoyed later! My hubby strangely likes it with Fritos but I just can't get on board with that.
