It’s no secret that we love chickpeas around here, and this pantry hummus is no exception!
I know there are a lot of hummus recipes out there in the internet world, but what makes this pantry hummus special is you can make it entirely from ingredients in your pantry. Which basically means that you can keep everything you need to whip up some delicious hummus at a moment’s notice stocked up in your pantry and ready to go. You know, for all those impromptu guests that…oh yeah. It’s 2020. Right. 🤦🏻♀️
But even if you’re not hosting drop by guests this pantry hummus is a life saver. In the vegan home its hard to eat out – unless you live like down the street from a vegan restaurant. So that means that most of your meals really need to happen at home. And there will be days where you just don’t want to cook. OK, lots of days. Like, all the days.
Enter in this pantry hummus 🙌🏻. This is a great go-to recipe for dinners. Just mix this hummus up (in a matter of minutes), throw it on a pita, tortilla, or just some sandwich bread, top it with whatever veggies you have laying around (seriously, any veggies will do), and 💥: dinner is served. Or, ya know, if you’re trying to pull together lunch while holding a fussy baby and corralling a toddler whose latest hobbies include writing on walls and running around the house at top speed (just for a random, generic example), this hummus is quick, easy, and toddler approved. 🤪 And if that is your situation this pantry hummus also pairs great with a glass of wine and naptimes all around. At least, that’s what I’ve heard…
OK. Now before you read the ingredients in the recipe and get all huffy and send me a message like, “YOU DUMB IDIOT, LEMONS GO IN THE FRIDGE NOT THE PANTRY. BECAUSE OF YOU I STORED MY LEMONS IN THE PANTRY AND NOW THEY A RUINED AND SO IS MY PANTRY AND I HAVE TO SELL MY HOUSE AND MOVE” (not that you would ever do that, but some people…) let me clarify. Yes, I put lemons in this recipe for pantry hummus. Yes, I know that lemons should not be stored in the pantry. But I also put an alternative of 100% pantry ingredients if for some strange reason you don’t always have lemons in your fridge at all times. And yes, the alternative tastes just as delicious. So now we can all chill 🥶.
- 1 can chickpeas OR 1 1/2 c cooked chickpeas
- 2/3 c EVOO
- 1 1/2 t cumin
- 2 1/2 t garlic powder
- 1 t onion powder
- 1/2 t salt
- pepper to taste
- 1 lemon, juiced OR 1 t of lemon pepper and 2 T of water
- Put all ingredients into a food processor and blend until smooth. Serve with pita, tortillas, bread, chips, crackers, and/or fresh veggies. Enjoy!
Please someone tell me we will have impromptu guests again…? I wouldn’t even care that they saw how messy my house is, I would just be happy to be with actual other people…
